The main distinction is security and scope: Unencrypted local backups exclude sensitive personal credentials for security reasons—meaning saved Wi-Fi passwords, Health/Activity data, Bluetooth pairings, Call History, and saved Keychain passwords will not be backed up. To enable local encryption: Open Finder (Mac) or iTunes / Apple Devices app (Windows), select your device in the sidebar, check the box for "Encrypt local backup," and set a password. Important: If you lose or forget this backup password, Apple cannot reset it, and you will never be able to restore that backup file!

In terms of raw backup file size, both types consume a similar amount of drive space on your computer's SSD/HDD. However, encrypted backups scramble the file structure on disk, preventing unauthorized local users or malware from extracting sqlite databases containing your SMS messages, WhatsApp chats, or call logs.
